We Meet Again...

Hello to the Internet, and any possible readers I may have. 

It's been a long time. I don't mean to neglect my Blog, but, just like I don't mean to neglect baskets of laundry, bookshelves full of unread books, and places unexplored, I've neglected my blog. 

It's been a year since I've last posted, sadly. But happily, there are good reasons!  My husband and I have celebrated 5 years of marriage, our twins turned 2, and we had a little boy this passed June. So, to say we've been busy, would be an understatement. 

When it comes to the scope of this blog, I am happy to report that I still have a passion for cooking, and am learning more and more all the time. (Can you ever stop learning when it comes to cooking?).

I'm still experimenting and trying new things, I still enjoy reading cookbooks, subscribe to lots of recipe e-mails and scour Pinterest. However, these things happen less often, I make a lot of repeats, and I don't cook on the weekends. 

So what have I made lately?  Well last night I attempted a recipe from my MOPS group's cookbook called Chili Lentils. I mainly skimmed the instructions and went on my way. 

That was a mistake, or so I though.

The recipe said a bag of lentils, but I failed to notice that it said for those lentils to be cooked. So I got everything else going and dumped a whole bag of lentils in the pot.  So I panicked, added 4 cups of water, and had every intention to make grilled cheese and soup. 

Thankfully it worked!  I got one of my two-year-olds to eat this, and my husband and I did too. It wasn't pretty, but sometimes good just isn't pretty, but that doesn't mean it can't be delicious.

This is my version:

Chili With Lentils
In a Dutch oven: 1/2 lb of ground turkey, browned and add beef billion to it, along with garlic powder. Set aside. Take a chopped onion and sauté with more garlic powder until soft. Add back the meat, add two cans of diced tomatoes, a bag of lentils, 4 cups of water, chili powder, oregano, cumin (around 1 tap each, add to taste), ranch seasoning, (add to taste), bring to boil, simmer for at least 45 minutes. Go until lentils are cooked through. 

You'll end up with this:

Not very pretty.  But very yummy. 

I served with cheese and sour cream. The sky is the limit. So is chili in general, add whatever seasonings you like, whatever toppings, whatever accompaniments. 

Cooking is an excellent way to express yourself. Go to your kitchen and do it!

I'm going to attempt to get my baby to sleep.
