Happy Monday night! Well, we might not be fans of Mondays, but at least we survived another one! How was yours? Mine was quiet, my sister had stayed with us during the move to help with the babies and the move itself, and she had been with us for a week and she left yesterday. We miss her! It was so nice to have someone to talk to and hang out with during the day, but I can't always have a live-in helper, and that's okay, she has a life of her own, and I am glad that she was able to put hers on hold for so long for us.
I thanked myself for thinking ahead and getting disciplined and meal planning again--which doesn't really require discipline, just concentration and creativity. But, the structure really does help, so I am really going to try to keep up on meal planning and doing some sort of exercise daily. Today's exercise was a ten minute ab-blaster and 140 squats, also, lifting two 18 pound babies, doing laundry, dishes, taking out trash, wiping counters, emptying boxes....oh wait, those don't count!

It was very easy, it took less than 15 minutes to prep and mix everything, and I baked it for 70 minutes, because I'm not sure how my new oven works. I used ranch dressing instead of bleu cheese, and an Italian blend of shredded cheese. I also sprinkled with Panko bread crumbs. This was a very good, and very easy recipe, it's one of those pantry/fridge meals that you usually have some, if not all of the ingredients, or something that could substitute easily. My husband liked this as well, and that is a great thing. I didn't add the full amount of buffalo sauce, because I was scared it'd be too spicy if I went overboard on the spice. In retrospect, I could have added more, but we just added some on top of our portions. I think that everyone should give this casserole a try when they are looking for something different, and a way to clear out some things that they've had a long time, (hash browns in my case).
