What to Make for Valentine's Day?

Hello Readers,

How is everyone doing on this Valentine's Day?  I'm doing pretty good, my husband spoiled me with a sweet card, chocolates, coffee and breakfast!  Now, I don't know about you, but I don't think we are doing anything for dinner tonight, we were talking about celebrating on the weekend, just because of busy work/moving/babies/homework schedules.  Well I have a recipe/meal idea I've been meaning to share with you for quite some time.  It's actually what I made for our Christmas dinner!!  Interested?  I hope so!!

Bacon Wrapped Filet Mignon

Caught your attention, didn't I?  So I got some nice filets, and three good-sized slices of bacon that you get at the butcher's counter for this meal.  I salted and peppered both sides of the meat and wrapped it in bacon and set in place with toothpicks.  I seared both the flat sides, and put it into the oven for 10 minutes at about 375, and kept checking from there.  I served it with home made mashed potatoes:  Boil potato cubes (with skin on), until fork tender, drain out most water, add milk, (some butter), sour cream and ranch dressing and mash until desired consistency.  I also made asparagus on the side.  The way i prepare it is so easy:  Take a paper towel and get it wet, but still useable, place asparagus on the paper towel, sprinkle with salt, and roll up so the majority of the sides of the asparagus are touching the wet paper towel.  Microwave for 1 minute and check if it is the desired doneness.  Super simple meal, super delicious results.  Here's a picture:
