Recipe Reviews: Margarita Pizza, Pumpkin Mousse, and Chocolate Peppermint Mocha Cupcakes with Peppermint Butter Cream Frosting

Hi Readers, 

How's your mid-week going?  I just got my twins down for a nap, and I'm trying to hurry up and get my computer-y things finished.  So let's make this quick!
These pictures are not in order of how I made them, but I am not very computer-literate, so bear with me!

So I asked my husband what he wanted for his birthday dinner, and he said pizza, pizza is his favorite food, especially margarita pizza!  So I took a stab at it!  I bought pre-made thin crust pizza, because I didn't want to deal with yeast and all that stuff.  So I brushed the crust with olive oil and sprinkled with kosher salt.  Then I sprinkled mozzarella, chopped Roma Tomatoes, chopped fresh basil, and chopped pistachios over the top.  Baked for about 10 minutes, and it was amazing!  Especially with Siracha on it!!

This next recipe I made for a Thanksgiving party and they asked for dessert other than pumpkin pie.  Well, I love this recipe, it is SO easy to make, and it doesn't require any baking, just whipping!  It's pumpkin mousse!  This is where I found the recipe:  http://www.foodnetwork.com/recipes/sandra-lee/pumpkin-mousse-recipe/index.html  Now I am telling you, this is so good and so easy, everyone should try making it at least once, you will not regret it!  You make your own whipped cream, which you do not add sugar to, but I did add vanilla extract and pumpkin pie spice (home made, recipe found here:  http://pinterest.com/pin/32088216066229063/ ).  But after I made it, I put together all the other ingredients, and then folded the pumpkin mixture with the whipped cream, and put it into a pre-made graham cracker crust!  It was a hit at the party!
This last recipe is Chocolate Peppermint Mocha cupcakes with peppermint butter cream frosting sprinkled with Andies peppermint candies.  I made these for my husband's birthday dessert yesterday and let me get started.

These were so easy to make, and to be honest, this was my first from-scratch cupcake!
