Recipe Review: Lasagna Pasta Pies

Hi Readers,

How's your Saturday night treating you?  Mine's pretty good, we have my brother-in-law over and we watched a movie.  I just finally went through all umpteen e-mails, (around 400), and am getting caught up on my blogging!  So I'm going to keep this post brief since I am going to be doing a second post tonight--meal planning, so stay tuned!
So since my 12 year old brother-in-law is over here, I wanted to make sure we didn't order pizza.  It seems like that's the only thing we ever eat when he's here, and I just hate that, I'm the owner of Cooking For Ireland, and I only serve pizza!  Disgusting!  Not that pizza is bad though!  So I wanted to make something kid-friendly, since he is a choosy eater.  Don't get me started, but I've heard the phrases, "I don't like bread."  "I don't like pie." and  "I don't like hamburgers."  So I basically love expanding culinary horizons.

So I have to say, I don't have jumbo muffin tins, so I used normal-sized muffin tins, so this took awhile longer, but I ended up with 12 instead of 8, so go me!  I added spicy Italian sausage and used garden rotini because that's what I had!
Overall these were amazingly easy, kid-friendly, husband-pleasing, and I liked it too!  These were fairly easy, and I will definitely be making these again!  Please give them a try!  You won't regret it!
