How's your Tuesday going? Mine's going alright, seems like it was really long and short at the same time, weird, huh? It was kind of rainy, sunny, rainy, windy today, so it was just kind of weird!
So I made Asian Style Tilapia in the slow cooker for dinner, and I found the recipe here: http://pinterest.com/pin/32088216066338682/ You won't even believe how simple this was. So at 11 this morning I pulled out 4 frozen solid tilapia fillets and put them in a bowl of really warm water while I cleaned the kitchen, once I was done half an hour later, I followed the directions, except I put in some of the "standard" frozen mixed veggies since I had an opened bag, I figured I could use it. I didn't use the sesame oil, just veggie oil.
I served these over jasmine rice, and asparagus on the side.
Okay, I have a confession to make, I avoid asparagus, want to know why? Because I don't know how to cook it. Yeah, sad. The other day I was watching Good Eats, (my favorite show), and it was about asparagus, and he showed me how to make asparagus!! Okay, maybe it wasn't just for me, but I bet if we met, we'd be kindred spirits! So what I did is prep half a bunch of asparagus, and then I got 3 paper towels damp, laid the asparagus flat, slightly salted, rolled so they weren't overlapped, and microwaved for 3 minutes! It worked, they're great! I'm so doing it again! Thanks AB!
So I hope that you try something new like I did, and I hope you try this, because it's only 300 calories-ish for the fish and the noodles they suggest, but I did rice instead.
