Recipe Reviews: Slow Cooker Shredded Pork and Chicken Alfredo Roll-Ups

Hi Readers,

How's everyone's Thursday night treating them?  Our's has been pretty good and relaxing, just have a few fussy twins on our hands who don't feel like sleeping, cuddling, rocking, swinging, etc.  You mamas and daddies know how that goes!  So I didn't get to blog about last night's dinner, or even get a picture of it because my phone died!  In less than a week I've become totally dependent upon my phone, sad, but true!

So last night I made the Slow Cooker Shredded Pork found on CookingChannel.com found it here:  http://pinterest.com/pin/32088216066450804/

Well I shouldn't say I made that last night, because technically I made it yesterday morning and it was in the Crock Pot for ten hours!  You can just imagine how good my house smelled!  So I basically followed this recipe, I put two cans of tomato sauce in the bottom, the chili powder, garlic powder, cumin, s&p, then I dropped in the pork, and s&p on that and two diced onions!  So after the ten hours I shredded this with a pair of tongs and a fork, then I put it on warmed flour tortillas, sour cream, hot sauce and cheese.  Had I planned it better, I would have put lettuce in it as well, for a little crunch, and some greenery.
Overall this was a hit!  It was so, so easy, and so tasty!  It is so versatile, and goes a long way, we each ate our fill for dinner, I ate it for lunch over egg noodles, and I probably will be eating it through the weekend!  I would definitely make this again, and recommend it to anyone who wants to impress with minimal work!

This was super delicious!  I used the shredded chicken I froze a few weeks ago, a jar of low fat Alfredo sauce, mozzarella cheese, dried oregano, garlic powder and lasagna noodles, pretty much exactly as the recipe calls for.  In fact, I did everything this recipe says to do!  Can you believe that?  Oh, except I used some Parmesean cheese!  Also, I didn't use the whole two cups of chicken.  If I could make this again, i would add spinach to break up the richness, possibly chopped up broccoli too.  I felt that this was easy to medium difficulty, but really the only hard part was trying not to break the lasagna noodles!!

So I hope you give these recipes a try, because they were super tasty, and the pork has provided great leftovers, the roll-ups are long gone though!
