How's your Monday going? Mine's been great! I had a huge to-do list, and I've gotten the majority of it done! Bam! I've been going since early this morning too, and I feel good! I even stuck to making dinner, so that's an added bonus! Let's talk dinner!

I have to say this was really, really good! I didn't make it exactly as the recipe called for, I actually didn't have onions, used dried herbs, and I just had plain old curry powder. I also halved this recipe, and let me tell you, that was a BAD idea, we were left wanting more! Plus this was a super easy meal to make, It would be silly not to make it again.
Also, I got to use my emmersion blender with this recipe, and that's super cool! I did not take a picture of this because it was gone so fast! Next time around I will make the regular amount, and serve it with something like egg rolls or some sort of "Americanized-Asian" food. This was really good!
So I hope you give this recipe a try, because it is a simple way to try an "exotic" spice, without being too crazy, or calling for too crazy of ingredients.
