Recipe Review: Quick and Easy Shrimp Fajitas

Hello Readers,

How's it goin'?  It's going pretty good here, had a pretty busy day with visitors and cleaning.  We even got a walk in this afternoon, it was really nice and relaxing.  I am really glad that tomorrow is Friday, I live for the weekend, it's so nice to have my husband home with us.  You have any plans for the weekend?  We are thinking about going to my husband's grandparent's house, and we're going to church, probably not much else, but it is nice to hang out.
Tonight I didn't have a lot of time to make dinner after our walk, but as it's been going this week, I've actually been following my meal plan pretty closely, and tonight's dinner was definitely one that would classify as a weeknight meal for busy mama's and daddy's.

I basically followed this recipe, but instead of using fresh peppers, I used frozen peppers and my frozen onions.  I also added the taco seasoning and garlic powder to this portion.







 I used frozen cooked shrimp instead of fresh.

Then I combined it all together and just cooked until all the water from the shrimp and peppers was mostly cooked out.  I also had the tortillas in the oven, and I made jasmine rice to serve on the side.

Overall these were EXTREMELY easy, I would say that they would be perfect for a weeknight when one just does not have the time to cook, and they are fairly healthy, and I'm sure that if one did not use pre-packaged taco seasoning, but home made, or their own mix of seasonings, it'd be quite healthy, aside from the flour tortilla.  Also, they are very tasty!!  These might even be a good thing for children to help make.

I want to take a minute to apologize for the weirdness of how my pictures were posted, my husband isn't here to help me figure out the formatting, and to be honest, I'm quite tired!
