My First Enchiladas

Hello Readers,

So just to start off, I am in a food coma, so I apologize for the typos and any other grammar issues.  So as my title says, I made my first enchiladas today.  I don't know why I haven't made them before, I love enchiladas, I love enchilada sauce, I love cheese, I love meat, it's all amazingly delicious, but I just have not made them before.

So they're called Roasted Shrimp Enchiladas with Jalapeno Cream Sauce, but mine are called Shrimp Enchiladas with Green Chili Cream Sauce.  I used pre-cooked shrimp, and canned green chilies and I did not add the canned chipotle peppers.  I used whole grain tortillas and I was only able to make 7.

These were fairly easy to make, and were SO delicious, I mean I ate three, and I'm no longer eating for three!!  This recipe is definitely a keeper.  Also, it was fun to watch the spinach and cabbage cook down, I like stuff like that.  I think that this would be a good dish to make with kids by letting them scoop the filling into the tortillas and letting them ladle the sauce onto the enchiladas.

But really, these were so easy, and so yummy, and fairly healthy, especially if you use water and not oil to cook ;)
