Meal Plan September 10-14

Hello Readers,

It's Friday, and that means I get to go grocery shopping tomorrow, by myself!  I leave my sweet husband home alone with the babies, and he does such a great job with them!  So since I'm going grocery shopping, I need to know what to buy, right?  Well let's see what I can decide on:

Now on one of my cooking boards on Babycenter.com someone posted a recipe that looks amazing, and it goes into none other than the CROCK POT, and if you know me, I am obsessed with my Crock, and I love trying new recipes in it, so I think I will be making this recipe:
Pork Chops and Cheesy Scalloped Potatoes

I'll try to get healthy and serve this with a salad, probably just a green salad with cucumbers, tomatoes and carrots, just simple.

I found the following recipe on Pinterest, and it looks amazing, really, really good, and I get to cook with cabbage, which is new for me, yeah, oh well, sometimes you just don't experience things until you're on your own!
Shrimp Enchiladas with (Green Chili) Cream Sauce
It's supposed to be made with jalapenos, but I don't want to, so I'll use green chilies, don't tell my husband!! I'll serve this with more salad.

With the leftover cabbage I think I'll make coleslaw, my SIL told me about this recipe she made:

I will make turkey sliders to go with the coleslaw because what goes better with coleslaw than something BBQ sauce?!?

My husband really has been wanting beef stew lately, and the beef stew I made on Monday kind of sucked, so I think I'll make plain old beef stew, big hunks of meat, lots of veggies, leftover potatoes, no tomatoes, and lots of seasoning.  I think that'll make up for my not so good idea from last time.  I'll probably just throw everything together and not really use a recipe.  Going rogue!

I foresee that I am going to have lots of leftover veggies from all these recipes I'm going to make, so what do I do with veggies??  In the Cooking For Ireland household, I make SOUP.  This time, I'm going to take a stab at minestrone, we'll go vegetarian for the night!  Here's a general idea of what I'll do:

I decided that we need to enjoy a sweet treat after dinner, this is what dessert I think I'm going to try for the week:
YES!  I am going to make an Autumn dessert, oh I'm already drooling!

Well, I'd better get onto doing stuff around the house, my babies are asleep, so I think I'll be able to take a silent shower, oh yes!
