Meal Plan October 1-5

Hello Readers,

TGIF!  Hooray!  So it's Friday, and you know what that means?  Meal planning day!  What's been nice is I've been really inspired this week, and it has been MUCH easier for me to pick out what to make, so score!  I found 5 new recipes, well, sort of, some are variations of things I've made before, and other things I've intended to make, but just haven't gotten around to it.

This calls for stuffing mix, chicken breasts, sour cream and cream of chicken soup, but I'm going to try my SOS Mix I made!

I'm adapting a recipe called Broccoli Stuffed Sole found here: http://pinterest.com/pin/32088216065953960/  to make it my own.  I'm going to use tilapia fillets, and probably spinach, possibly some broccoli.  Oh that's right, I'm bringing back tilapia Tuesdays this Tuesday.  I used to always do tilapia Tuesdays when I was in school last summer, because it was so easy to make, and easy was good when I was that busy!

Now I've never worked with squash before, I've only (knowingly) consumed it once, and I had a cold, so I couldn't even taste it.  So, let's get Autumn-y and try something new!  I'll let you know how it turns out!

I'm going to try to make this version of Slow Cooker Potato Soup again:  http://pinterest.com/pin/32088216064735318/  I had planned to make that a few weeks back when I wasn't very inspired, or disciplined with my meal planning.

We're going to have a sort of Brinner Casserole with this Potato Bacon Casserole:  http://pinterest.com/pin/32088216064569849/  I haven't made something like this is such a long time, and it looks really good, and a comfortingly easy way to end the week!
