Exciting Stuff!

Hello Readers,

I am so excited today!  For a few reasons, I am going to let you know how my bacon & broccoli mac & cheese turned out, I'm entering a recipe contest, and it's my anniversary!!

First off I'll start with the bacon and broccoli mac and cheese.  It was good, it was great, it was delicious!  Here's the link:  http://www.macaroniandcheesecake.com/2011/09/revolutionary-mac-cheese.html
It was so simple, first you simmer the noodles in milk, and it was super creamy at that stage, I added extra milk, and didn't cook the whole time it suggested.  I also added cayenne and garlic powder to the cooking noodles.
While the noodles were simmering, I cut up and fried 3 slices of bacon and defrosted broccoli in the microwave.  Once the noodles were cooked through I removed them from the heat, added my bacon, and some of the grease from it, and the cheese, and stirred to my heart's content.  Then I added the broccoli, stirred more, and added nutmeg, garlic powder, salt, pepper and cayenne.  I put it into a small glass baking dish, put bread crumbs and more cheese over the top, and baked at 375 for a few minutes!  It was so creamy and good!  My husband didn't get home from work until late though, so he didn't really get to enjoy it, definitely a recipe you cook to be consumed immediately.

See the stretchy ooey gooeyness??

So I give this recipe thumbs up, because it was amazingly simple, and delicious!  I hope you give it a try!

Next, I am entering into a recipe contest to try to get published into a real-life cookbook!  How cool would that be?  I get to use to recipes, now I just need to figure out which ones.  I'll keep you posted as things progress!

Also I signed up to be guest chef on a board on Babycenter.com called Cooking For Your Family.  It will be sometime next month, here's the link:  http://community.babycenter.com/groups/a535/cooking_for_your_family  My screen name is irelandtwins.

Lastly, today is my 3rd wedding anniversary!  So when I meal planned, I forgot about tonight, so I am not going to be making dinner, we are going to go to a steak house in the next town over!  I am SO EXCITED! I'm going to get crab legs, and my husband will get some sort of steak, and they have this amazing salad bar with all sorts of good stuff, like soups, breads, pasta salad, seafood salad, regular salad, it's insane!  And not too expensive!  I cannot wait!  I'm salivating thinking about it ;)

So I better get going because my awesome cousin is going to watch the twins for us tonight, and I don't want my house to be a disaster area!  Plenty to clean in a short time!

Happy September 5th!!!

Meg
