Pork Tenderloin

Hello Readers,

Ever play with a pork tenderloin?  Do you dare?  I dore..dared?  I dared myself?  Either way I have just been cooking for myself this week and I wanted to use something versatile and try out some recipes while I'm my only critic.
Now this wasn't my first tenderloin, but I've never played with it before!

Monday I was planning to put it in the crock pot, but I woke up late and didn't have the 8-10 hours I wanted to cook it for, so I baked it at 350 until it was 160 degrees.  That took 45 mins at first and kept putting it back in.  My oven sucks.  So I sliced it thin and put it on a bun, pretty simple and it tasted really good!

Tuesday I had a box of Zataran's Jambalaya mix, and I diced some of the tenderloin and put that in, and I still have leftovers!  This afternoon I put it on whole grain tortillas with some cheese and sour cream and it was great!

Today, (Wednesday), I made what I call my Literal Pork Fried Rice.  My husband made fun of me because I make fried rice, but I never have put pork in it before, but I always call it my pork fried rice, so this time since it literally has pork in it, I am giving it the title of Literal Pork Fried Rice!  So I diced some of the loin, chopped up an onion, chopped up a garlic clove and poured in some frozen mixed veggies and cooked those with low sodium soy sauce and Asian seasoning.  Then I added brown rice that I had already cooked in my rice cooker and then I scrambled a couple eggs in it.  Super good and I have a ton of leftovers!

I didn't really take any pictures, and I'm so tired that I really don't want to upload any!
