It's Been Six Months!

Hey Readers,

I'm baa-aack!  So I've had a crazy 6 months, I mean really crazy.  I have graduated from college, my husband graduated from college, I took my clinical dental hygiene board, I passed my national written board, and my clinical board, got the credentials for my expanded practice permit, oh, and I had twins!  Yeah, I think I already mentioned that I was pregnant with twins, but I was so busy, I didn't have time, or energy to write, or cook!

So I thought my first meal back in the blogging world should be something amazing, husband-friendly, and easy!  I made the Crock Pot BBQ chicken, which I've mentioned previously in this blog, but the ingredients are super easy:
1/4 cup brown sugar
1/4 cup vinegar
BBQ sauce (I used sweet baby ray's sweet and spicy)
garlic powder
red pepper flakes
chicken breast

I put it all together and put it on high for like four hours, served it on a hamburger bun and I fried up some onions and garlic and served it all together with bbq sauce.

These were great!  I even used shredded zucchini that I prepped last summer and froze!  

The ingredients are listed on the link,  but I used Monterrey cheese, and put in garlic powder, and didn't add any salt or pepper, and I sprinkled parmesean over the top.  These were great, super easy, and they reminded me of homemade mac and cheese.  The texture of the onions were great, and the zucchini was virtually flavorless, which would be great for kids.  Next time I want to make them with cheddar to strengthen the flavor!

There were originally six on my plate, but we had to try one first ;)
