I'm back on track, (for the most part) with my weeknight meal planning, and I though I should share with you what I made this week. So I decided Tuesday get's the coveted spot of Crock Pot night since I don't get home until after 5. So my plan for this past week was:
Broccoli Mac and Cheese
Crock Pot Roast
Jalapeno Kettle Chip Crusted Chicken
I got a 3/4! I just didn't have the energy on Wednesday to make the sliders. BUT I did make dinner every other night :)

So first off, you can just assume that I kind of did what I wanted to this recipe and used it as a guide. Some things I changed were that I added more broccoli and less pasta than it called for, 1% instead of skim milk, regular butter, but I used less than they called for, and I used mozzarella instead of whatever cheese they called for. Also, I didn't put too much on the top with the breading. It was glorious. Would you like to see a picture?
Yeah. Delicious! And I had leftovers all week!! Oh I also added a lot of pepper too it, I couldn't help myself.
I've already posted about the pot roast, same recipe as in the previous blog. It was good as usual ;)
I skipped out on the sliders, oh well.

Anyways, I changed the recipe up. I basically made chicken nuggets out of these, and baked them longer than she said to, dang elevation. Anyways, these were good and super juicy, but they were SO SPICY, and I couldn't eat very many. My husband ate the rest! But I would totally do this again! Sorry, I didn't take any pictures!!!
