I'm Officially the Naughtiest Blogger Ever!

Hello Readers,

Long time no communication!  I have a confession to make, there is a REASON why I haven't been posting, besides the Holidays, and my boards coming up.  I am pregnant!  I feel pretty yucky, and the thought of cooking makes me want to turn green.  That is why I haven't been posting, because I haven't really been creating or cooking!  It is so hard to enjoy cooking when you don't want to eat any of it!

For our Christmas celebration I decided to make Shortcut Chicken Manicotti!  AND I even got a picture before I ate it all!
I prefer this manicotti to more traditional recipes because it isn't tomato based.  It has cottage/ricotta cheese, spinach, chicken, cheese, and noodles!  Usually the prep takes me forever, and then it takes an hour to bake and then you have to wait afterwards, blah blah blah!  This time, I decided to cook my chicken first, and chop it, same with the spinach (opposite order), and I "made" ricotta from cottage cheese.  It turned out preeettty durn good.  If you would like the recipe please let me know!

But I feel so glad to get that off my chest!  I am sorry that I haven't been keeping up!  Once I take my board exam, I think I will be back on my feet (in the kitchen).
